  2. when pan is hot add egg whites. the amount depends on how much you want. about 3-4 tblsp is good I say.
  3. add diced green/red peppers.
  4. add adobo, cilantro, 2 tblsp of cheddar and cayenne pepper.
  5. As egg whites cook tilt pan to allow liquid to fall under the already cooked egg. Continue doing this until no more liquid is left on top. Easiest w/a rubber spatula.
